Haddock

Raw Haddock on slate

Fresh haddock has a clean, white flesh and can be cooked much like cod. You can recognize a fresh haddock because the flesh is firm, and the fillets are translucent.

It’s particularly popular in Nova Scotia and is commonly used in fish and chips.

Haddock are found on both sides of the North Atlantic with a major stock thriving in the southern Scotian Shelf and the Bay of Fundy.

Thanks to the adoption of management programs, haddock populations off Nova Scotia have been increasing since the early 1990s, and are currently harvested at only a fraction of sustainable yields.

In Atlantic Canada, haddock is usually in-season throughout the year.
